Up until recently I had a “love hate” relationship with brussel sprouts. I’d buy them because I knew they were good for me – but I never really enjoyed them. That is until recently when a friend hipped me to this simple and oh so awesome recipe – now I can’t get enough of them – (my kid loves them too!)
Roasted Brussel Sprouts
Ingredients
- 1 1/2 pounds Brussels sprouts
- 3 tablespoons good olive oil
- 3/4 teaspoon sea salt
Directions
- Preheat oven to 400 degrees F.
- Cut off the brown ends of the brussels sprouts.
- Mix them in a bowl with the olive oil and salt. (I put everything in a freezer bag and shake.)
- Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly.
- Sprinkle with more sea salt if desired and serve!
Added bonus: Brussel sprouts are an incredibly nutritious vegetable and are said to offer protection from vitamin A deficiency, bone loss, iron deficiency anaemia, and believed to protect from cardiovascular diseases and, colon and prostate cancers!

I must admit I HATE brussel sprouts, but I never thought of roasting them. I love to roast veggies because the caramelization is amazing. I may just have to try this recipe or at least the method.
