I’m in love with this recipe from the Weight Watchers Points Plus Cookbook. It’s easy to make, full of flavor and low in fat and calories! (For those on WW it’s 8 points per serving

Grilled Shimp Tostadas
Ingredients
- 2 tablespoons of reduced-sodium taco seasoning
- 2 tablespoons lime juice
- 2 teaspoons olive oil
- 2 plum tomatoes, chopped
- 1 ear corn on the cob, kernels removed
- 1/2 avocado, pitted, peeled and cut into 1/2-inch slices
- 1/2 cup chopped red onion
- 3/4 pound medium shrimp, peeled deveined
- 4 (6-inch) corn tortillas
- 1/3 cup chopped fresh cilantro
- 1 cup fat-free refried beans, warmed
- 2 cups thinly sliced romaine lettuce
- 1/4 cup crumbled reduced-fat feta cheese
Directions
1. Spray grill rack with olive oil nonstick spray. Preheat grill to medium -high or prepare medium hot fire.
2. Whisk together taco seasoning, lime juice and oil in medium bowl. Add tomatoes, corn, avocado and onion and toss to coat. set aside.
3. Lightly spray shrimp with olive oil nonstick spray. Place on grill rack and grill until opaque in center, about 2 minutes on each side. Transfer to plate.
4. Lightly spray tortillas with olive oil nonstick. Place tortillas on grill rack and grill until browned in spots and crispy about 2 minutes on each side.
5. Add shrimp and cilantro to tomato mixture and toss to combine. Spread each tortillas with 1/4 cup of the refried beans then top with 1/2 cup of the romaine. Top evenly with shrimp mixture and sprinkle evenly with feta.
