When I love something, I love it to death.
Clothing? I will wear an outfit out! A makeup color – I’ll rock it until it’s discontinued. (True story, I once begged the Clinique counter lady to call headquarters to see if they had leftovers of my favorite discontinued color. No luck.) The same goes for food – I will eat something until I literally cannot stand it anymore…except when it comes to antipasto. I have loved everything about the salty, sour ingredients since I was a kid.
What is antipasto? It’s an italian dish most commonly served before dinner. I often eat less when I have the combination below before a meal. There are lots of versions – really it’s a mix of ingredients served together before dinner. (I often love it more than the actual meal.) Here’s my favorite:
- One cub of feta, crumbled
- 1 cup of romaine lettuce
- 1 teaspoon of extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon chopped fresh flat-leaf parsley
- 1/2 teaspoon crushed red pepper flakes
- Coarse salt and freshly ground pepper
- 1 cup roasted red peppers, drained and cut into strips
- 1 cup artichoke hearts, drained and quartered
- 1 cup pepperoncini, drained
- 1 cup mixed olives, drained
- 1/2 carrot thinly sliced
- 1/2 cup of cauliflower thinly sliced
Mix ingredients together and enjoy! This recipe will feed about 4.
